Tim Burvill draws his insiration from the crisp Sancerre wines of France. His straight forward, low intervention winemaking techniques translate into solid Chardonnay wines with bold varietal definition and intense fruit. The same careful approach is taken in the vineyard. Grapes are harvested in the cool of the night just as the tropical flavours begin to appear. A completely wild, indigenous yeast vinification serves to enhance the aromatics, ferments are run very cool to retain valuable volatiles. A component of large format oak ferments reduce acid harshness while contributing complexity. Five months of lees stirring compliments the mid palate texture and contributes a rich nutty taste.
Pale green hue. Pungent tropical and melon fruit laced with exotic dashes of kiwi and cashew. Stylish and elegant, the vibrant fruit drenches the tastebuds with a wave of intense pineapple, peaches and nectarine.
